How the tandoor works

Lit at six in the morning and not allowed to go out all day. The reason is the thickness of the wall.

The clay wall of a tandoor is twenty centimetres thick. It absorbs heat slowly and gives it back slowly, which is why bread does not scorch on one side.

It is lit at six; by nine the heat has evened out. The first bread reaches the table at eleven.
