Eleven years in the same courtyard, working from the same recipe book.
DEMO Restaurant opened in 2015 in a small courtyard house in the Old City. We started with thirty seats; today there are two rooms and a summer terrace.
The kitchen
The menu is short and changes with the season. Everything is cooked the same day — we do not use frozen prepared food. The tandoor is lit at six in the morning.
Produce
Meat arrives twice a week from farms in Quba and Ismayilli. Vegetables come from the local market when in season.
The rooms
The first room seats forty, the second seats twenty-five and can be closed off. The summer terrace runs from April to October and holds thirty.
